WATERMELON, TOMATO + AVOCADO SALAD WITH CHILLI & LIME DRESSING

Directions
  1. Remove the stem from the red chilli and roughly chop it. In a mortar and pestle, pound the chilli, garlic, and sugar into a rough paste so the sugar has dissolved. Transfer to a small glass jar and add the fish sauce and lime juice to the paste and shake to mix well.
  2. In a medium serving bowl, combine the diced watermelon, tomato wedges, diced avocado, spring onions, and chopped coriander. Gently toss to combine.
  3. Pour the prepared dressing over the salad. Toss gently to coat the ingredients without breaking the avocado cubes or over-mixing the watery fruit.
  4. Sprinkle the fried shallots on top just before serving.
  5. Serve the salad immediately, ensuring each serving has a bit of everything.
