
Directions
- Remove the stem from the red chilli and roughly chop it. In a mortar and pestle, pound the chilli, garlic, and sugar into a rough paste so the sugar has dissolved. Transfer to a small glass jar and add the fish sauce and lime juice to the paste and shake to mix well.
- In a medium serving bowl, combine the diced watermelon, tomato wedges, diced avocado, spring onions, and chopped coriander. Gently toss to combine.
- Pour the prepared dressing over the salad. Toss gently to coat the ingredients without breaking the avocado cubes or over-mixing the watery fruit.
- Sprinkle the fried shallots on top just before serving.
- Serve the salad immediately, ensuring each serving has a bit of everything.
