WATERMELON SORBET

Directions

Cut the watermelon flesh into chunks, remove the seeds and the tough outer skin.

Place the watermelon chunks flat on tray. Place into the freezer for 4-6 hours to freeze.

Remove from the freezer. Add the frozen watermelon, lime juice, lime zest and maple syrup to a bender and blitz.

Store in an airtight container in the freezer until ready to serve. Allow to defrost slightly for 5 minutes before serving. Serve with fresh mint leaves.
