WATERMELON, HALLOUMI & MINT SALAD

Directions

To make the dressing:

Place the olive oil, balsamic vinegar and honey in a bowl and whisk together. Season with salt and pepper. Set aside.

Prepare the Salad:

Cut the watermelon into cubes, discarding the rind. Removing the seeds if you wish. Dice the halloumi cheese into cubes, no need to cook the halloumi. Tear the mint leaves apart. Cut the avocado into cubes. In a large bowl add the watermelon, halloumi, avocado, mint leaves, macadamia nuts and lemon juice. Pour over the dressing, gently toss the salad. Garnish with coconut chips. Season with salt and pepper.

Best served immediately.
