Directions
Preheat oven at 180°C.
Using a sharp knife remove the corn from the cob and dice the ham into small pieces.
In a large bowl add the flour, corn, ham, spinach, cheese and season with salt and pepper. Mix the dry ingredients together. Make a well in the centre. Add the eggs, milk and oil. Use a fork to beat the eggs, oil and milk together.
Mix all the ingredients together.
Spoon the mixture in a lined or oiled muffin tin and bake for 20-25 minutes until skewer or fork comes out clean.
