Directions
Preheat oven at 180 degrees.
Using a sharp knife remove the corn from the cob and dice the ham into small pieces.
In a large bowl add the flour, corn, ham, spinach, cheese and season with salt and pepper. Mix the dry ingredients together. Make well in the centre. Add in the eggs, milk, and oil. Use a fork to beat the eggs, oil and milk together.
Mix all the ingredients together.
Spoon the mixture in a lined or oiled muffin tin and bake for 20-25 minutes until scure or fork comes
