sweet corn fritters with pancetta

Directions

Cut the corn from the cobs and place in a bowl, separate the kernels if they are sticking together.

Heat a large non-stick frying pan to medium high and spray lightly with olive oil. While the pan is heating, mix the corn, chives and red capsicum together and season well with salt and pepper.

Add eggs and stir through, before adding flour and combining well.

Drop a spoonful of mixture per fritter into frying pan, turning after 2-3 minutes.

Once cooled, top the fritters with sour cream, pancetta and chives. Season with salt and pepper to taste.
