
Directions
Cut the beetroot into even bite sized pieces, heat the olive oil and sauté the LeaderBrand Baby Beetroot, thyme, vinegar, honey and spice for a few minutes, tossing until they start to caramelise.
Toast the walnut halves in a pan with the butter and maple syrup until shiny and golden, transfer to a sheet of baking paper and allow to cool.
Arrange the LeaderBrand Wild Rocket leaves and segmented orange on a platter. Spoon over the warm sweet & sour beetroot. Sprinkle with the toasted maple walnuts and feta.

- 1 Tbsp fresh thyme or rosemary, finely chopped
- ¼ cup white vinegar

- 2 oranges, peeled and segmented
