Directions
Remove the corn from the husks. Brush the corn with oil. Place the corn onto a heated griddle pan or BBQ. Cook for 8-10 minutes rotating often until the corn becomes charred all over. Remove the corn from the heat & set aside to cool.
Remove the seeds from the cucumber and tomato. Dice the tomato, cucumber, capsicum and red onion. Chop the dill.
Stand the corn upwards on a chopping board the thicker side down on a chopping board. Using a sharp knife carefully slice downwards to remove the corn kernels from the cob.
To assemble the salad, add LeaderBrand’s Crispy Salad into a bowl. Add the corn onions, cucumber, tomato, capsicum and feta. Drizzle over the Kiwi Dressing included in the LeaderBrand salad. Toss all the salad together. Best served immediately.
