Watermelon Margarita
Remove the rid on the watermelon and place in a blender until it becomes juice. Strain it through a sieve to remove any seeds or pulpy bits.
Shake all ingredients and serve over ice, in a salt rimmed glass, with a wedge of lime.
Mexican Street Food
Simply remove the corn kernels from the cob and fry them in a non-stick pan with some vegetable oil until they’re nice and charred. This can take up to 10 mins.
Combine charred corn in a bowl with sour cream/mayo, crumbly feta, finely sliced spring onion, chopped coriander, lime juice, diced jalapeno and a good crack of salt.
Serve with tortilla chips or crunchy lettuce alongside guacamole for the perfect afternoon or pre-dinner snack.
