Dice the onion. Mince the garlic and ginger.  

Peel the LeaderBrand squash, remove the seeds and cut into cubes. 

Heat a large heavy based pot with oil. Add the onions, sauté for 4-5 minutes until translucent. Add on the garlic and ginger cook out for 1 minutes. Add the spices and salt.  Add the LeaderBrand squash sauté for 2 minutes stirring often. Pour in the chopped tomatoes and vegetable stock. Cover the pot with a lid and simmer for 10-12 minutes. Drain and rinse the chickpeas. Add the chickpeas and coconut milk into the pot. Cook for 10 minutes. Mix through the LeaderBrand baby spinach and serve.  

Season with salt and pepper if required. 

Garnish with yogurt and fresh coriander if you wish. Serve with rice and naan.
