BREAKFAST PIZZA

Directions

Preheat oven to 180 degrees. Place the bacon rashers onto a lined baking tray, cook in the oven for 7 minutes.

Heat a frying pan with 1 tbsp of oil. Squeeze the sausage meat from the sausage casing & sliced mushrooms into the pan. Using a spatula to break apart the sausage meat, cook for 5 minutes.

Remove the rashers from the oven and set the sausage and mushrooms aside to cool.

Increase oven temperate to 200 degrees. Lightly grease 2 large baking trays. Place the pizza bases on the prepared trays.

Divide the pizza sauce between the two pizza bases using a spoon to spread the mixture around. Sprinkle with half the pizza cheese and top with the spinach, bacon, sausage, mushroom and tomatoes. Sprinkle with the remaining cheese. Crack 3 eggs onto each pizza.

Cook the pizzas in the oven for 10-12 minutes until the bases are crispy, cheese has melted, and the eggs are cooked.

Remove from the oven and scatter a hand full of wild rocket on top of each pizza.
