
Directions
Wash the skin of the watermelon.
Slice three rounds of watermelon. Cut each round into 4 triangles.
Preheat the BBQ or griddle pan.
In a bowl combine the honey, lime juice and lime zest. Season with salt and pepper.
Place the watermelon onto the preheated grill. Cook on either side for 2 minutes. The Watermelon should still be slightly crunchy.
Remove from the grill and serve.
Assemble on a large serving plate, drizzle over a spoonful of the honey and lime syrup. Garnish with freshly chopped mint and salt.
