Directions
Remove the shells and heads from the bodies of the prawns leaving the tails intact. Mix together in a bowl the oil, chilli paste, and ginger. Add the prawns and toss through. Leave to marinate for 10 minutes.
Heat a frying pan or BBQ grill plate over a medium heat. Arrange the prawns over the grill plate and pan, and fry for 1 minute on one side, then turn over and fry the other side for 1 minute until prawns are no longer transparent.
Remove the prawns to a side dish. While grill plate still hot add the cherry tomatoes and capsicums and stir fry until tender. Remove from plate and set aside.
Arrange the LeaderBrand Caesar Kit leaves on a large serving plate. Top with peach wedges, cooked prawns, tomatoes and capsicum. Sprinkle over the salad croutons and creamy Caesar dressing. Garnish with fresh herbs.
