
Directions
1. Prepare the salad.
- Start by steaming the corn cobs or microwaving them for 3 minutes. Once done, cut the kernels off the cob and place them in a large bowl or container.
- Cut your watermelon into cubes roughly 1x1cm and add the kernels.
- Depending on how much you like coriander, roughly chop some and add to your watermelon and corn with a small handful of toasted sesame seeds and your edamame beans.
2. Frying
- In a hot pan fry off your prawns until done then remove from the heat and add a squeeze of lemon juice and leave to cool.
- Whilst your prawns are cooling, heat up enough oil to shallow fry your rice papers.
- When the oil is hot, quarter up your rice papers and add them to the oil one at a time until they are done. They will take 2-3 seconds max.
- Set your crackers aside and season.
3. Build
- Add a good amount of LeaderBrand Ranchslaw to your salad and also the provided homestyle dressing.
- Add the prawns to the salad and mix thoroughly.
- Serve with your crackers and enjoy.
