
Directions
Prep the corn, remove the husk. Slice the bottom off the corn, then using a sharp knife slice vertically down the corn to remove the kernels.
Add 1 tbsp of oil to a pan, add the corn. Place the lid on and turn the meat to medium/high.
Let the corn simmer away until lightly charred – approximately 10 mins.
Whilst the sweetcorn is cooking make the dressing. Place everything into a blender and whizz together until smooth. Set aside.
Chop the spring onion, avocado, wild rocket, coriander and jalapeños.
Once the corn has cooled slightly, add them to a bowl with all the other salad ingredients, pour over half the dressing and toss well.
Drizzle the remaining dressing over the top and serve. Squeeze extra lime juice over the top to taste.
Tip: Try serving with corn chips as a delicious dip.
