SPICY GOCHUJANG COURGETTES

Directions

Slice the courgette in half. Season with salt. 

Heat a large frying pan with 1 tbsp of oil to medium heat.  Place the courgettes into the pan skin side up. Cook on either side for 4-5 minutes still slightly soft but still crunchy.  

To make the sauce in a bowl combine the sesame oil, gochujang paste, honey, and rice wine vinegar. Mix to combine.  

Heat a small pan with 1 tbsp oil add in the garlic, sauté for 1 minute. Pour in the sauce ingredients cook out for 1 minute more ensuring to stirring often.  

To serve  

Layer the courgette up on a plate drizzling the sauce and fried shallots between layers. Garnish with sliced spring onion.
