
Directions
Remove the kernels from the LeaderBrand Sweetcorn using a sharp knife. Heat a large frying pan over medium heat with a drizzle of oil. Add the diced onion and minced garlic, cooking until softened.
Add the corn kernels and cook until softened. Stir in the chipotle powder and chilli flakes, salt and pepper. Add in the LeaderBrand Baby Spinach and stir until wilted. Mix in the cream cheese and sour cream, stirring until creamy and well combined. Add a splash of milk if it’s too thick.
To make the chipotle butter melt the butter in a pan. Stir in the chipotle and paprika powder and cook until bubbling. Remove from heat.
To make the lime dressing, In a bowl, whisk together the mayonnaise and lime juice until smooth.
Assemble the Dip:
Transfer the warm corn mixture to a serving bowl.
Top with crumbled feta, fresh coriander, and lime dressing.
Drizzle the chipotle butter over the dip. Garnish with extra charred corn kernels, if desired.
Serve immediately with corn chips for dipping.

- 120g bag LeaderBrand Baby Spinach
- 1 white onion, diced
- 2 cloves garlic, minced

- ⅓ cup sour cream

Chipotle Butter:
- 40g butter
- 1 tsp chipotle seasoning
Lime Mayo:
- Juice of ½ lime
- 80g sour cream
To Serve:
- Corn chips
