Directions
Preheat the oven to 200°C.
Slice the courgettes in half down the middle. Using a teaspoon scoop out the flesh from the courgettes. Keep the flesh for the boat filling. Season the courgette boats with salt and pepper. Set aside. Chop the courgette flesh into smaller pieces. Chop the onion and tomato.
In a large bowl combine the sausage meat, onion powder, garlic powder, Italian herbs, paprika, salt and pepper. Mix well.
Heat a large pot or frying with 1 tbsp olive oil. Add the sausage meat, chopped courgette flesh, onion and tomato into the pot. Cook for 10 minutes siring often.
Remove from the heat.
Divide the sausage mixture between courgette boats.
Sprinkle over the mozzarella cheese and oregano.
Bake in the oven for 25-30 minutes.
Remove from the oven and serve.
