  1. Blanch the LeaderBrand broccoli florets and the peas together in boiling water for 2 minutes until bright green and just tender. Scoop out and set aside. Roughly chop half the broccoli into small pieces and set aside separately.
  2. Heat oil in a large deep frying pan over medium heat. Add the ¾ of the diced onion, reserving a little to garnish, and cook for 5 minutes, until soft and translucent.
  3. Add the garlic, chilli and cumin seeds and cook for 1 minute, until fragrant.
  4. Add the LeaderBrand Baby Spinach in batches, stirring until wilted down.
  5. Transfer the spinach mixture to a blender with the whole broccoli florets, peas, stock, coriander, parsley and dill. Season well with salt and pepper and blitz until smooth.
  6. Return the sauce to the pan over low heat. Stir through the chopped broccoli pieces and chickpeas and heat for 3-4 minutes until warmed through.
  7. Make four wells in the sauce and crack an egg into each. Season with salt and pepper, cover and cook until the whites are just set and the yolks are still runny, about 6–8 minutes.
  8. Scatter over the crumbled feta, avocado slices, remaining diced red onion and extra coriander. Top with jalapeños if using and serve straight from the pan with crusty bread alongside.

  • ½ cup vegetable stock
  • ¼ cup coriander, plus more to garnish
  • ¼ cup parsley
  • 2 tbsp dill
  • 1 x 400g tin chickpeas, drained and rinsed
  • 4 eggs
  • 50g feta, crumbled
  • 1 avocado, sliced
  • Fresh or jarred jalapeños, sliced, to serve (optional)
  • Crusty bread, to serve
