Directions
- Heat 2-3cm of oil in a small saucepan over medium heat. Cut the wonton wrappers into thin strips and fry in batches for 30-60 seconds until crispy and golden brown. Transfer to a paper towel-lined plate and set aside.
- For the dressing, put the LeaderBrand Ranchslaw dressing packet in a small bowl or jar along with the remaining dressing ingredients. Whisk until well combined.
- Place the LeaderBrand Ranchslaw, shredded chicken, coriander, mint, spring onions and half of the cashews in a large mixing bowl. Pour over the dressing and toss well.
- Transfer to a serving bowl or plate and top with the crispy wonton strips, remaining cashew nuts and sesame seeds.

- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tsp fish sauce

- 1 clove garlic, minced
