Directions
Blanch or steam the LeaderBrand Broccoli and LeaderBrand Asparagus until tender and bright green. Refresh under cold water. Drain well.
Sear or grill the halloumi slices until golden.
Combine the lemon zest, juice and aioli.
When ready to serve, combine the LeaderBrand Wild Rocket, Baby Spinach, Lettuce, Broccoli and Asparagus on a platter. Top with the haloumi slices and watermelon. Scatter with pomegranate seeds and mint leaves
Drizzle with lemon aioli and sprinkle over cracked pepper.
