CHICKEN SMASH TACOS WITH WILD ROCKET

Directions

In a large bowl combine the chicken mince and seasonings and mix well, set aside to marinate. Toss the LeaderBrand Wild Rocket, LeaderBrand Ranchslaw and carrot together to make a rocket slaw. Dress your favourite dressing, the LeaderBrand Homestyle Dressing (included in the Ranchslaw bag) or a little burger sauce. 

Divide the mince into 8 balls and place one in the center of each taco and then using the back of a spoon or fork smash the mince to cover the tortilla. Heat a little olive oil in a frying pan, add 1 tortilla mince side down and cook for 1-2 minutes, when mince is cooked and golden flip and cook the tortilla side until crispy, repeat with remaining tacos. Top each cooked taco with rocket slaw and add a couple of pickles and a drizzle of burger sauce.
