Directions
- Cook the noodles as per the packet instructions until just tender. Drain, rinse under cold water and set aside.
- In a small bowl or jar, whisk together all of the dressing ingredients until smooth and set aside.
- Place the cooked noodles in a large bowl along with the LeaderBrand Broccoslaw, shredded chicken, edamame, radish, avocado, coriander and spring onion. Pour over the dressing and toss well to combine.
- Transfer to a serving bowl or plates, and sprinkle with toasted peanuts and extra herbs if you wish.

- 1 bag LeaderBrand Broccoslaw
- 150g rice noodles (or other noodles of your choice)
- 2 cups shredded chicken
- 1 cup shelled edamame, defrosted and cooked
- 2 radish, thinly sliced
- 1 avocado, diced
- 1 cup packed coriander leaves, plus more to garnish
- 2 spring onions, thinly sliced, plus more to garnish
- ¼ cup toasted chopped peanuts
Dressing
- ½ cup neutral oil
- ¼ peanut butter
- 1 tbsp runny honey or maple syrup
- 2 tbsp soy sauce
- juice of 1 lime (about 1 tbsp)
- 1 tbsp finely grated ginger
- 1 clove garlic, minced
