DON’T TOSS YOUR STALKS: WHY BROCCOLI DESERVES A SECOND LOOK

That’s why we’re shining a spotlight on one of the most overlooked heroes in your fridge: the broccoli stalk. 

Every year, over 2500 tonnes of broccoli stalks and leaves are being discarded in New Zealand homes, despite being just as edible and nutritious as the florets. This is not only a massive waste of the tastiest part of the plant, but also a massive waste of money. 

In fact, the stalk makes up around 60% of the broccoli you buy at the supermarket. Tossing it means you’re only enjoying 40% of the goodness. 

Our CEO Richard McPhail, a local broccoli grower, says in the current cost of living crisis tossing out the stalks is a huge waste of money. 

“As the cost of living continues to rise, many of us are looking for ways to save. Simple changes like eating every part of your fruit and veggies that are in season can help you stretch your dollar further and ensure that you are get the best value and nutritional boost from your fresh produce,” he says.

With food making up nearly half the weight of the average Auckland household’s rubbish, and more than $3 billion worth of food wasted nationwide each year, getting the most from every vegetable makes more sense than ever.  

“The funny part is that my kids fight over the stalks because they are the sweetest part of the veg! The stalks are so versatile, you can cut them up and add to your curry, stir-fry, or whizz them up to make a delicious pesto. The options are endless.  

Dr. Carolyn Lister, 5+ A Day Trustee and Principal Scientist at Plant & Food Research, emphasises that broccoli stalks offer just as much goodness as the florets.  

“Broccoli stems and florets are both excellent sources of nutrition and play a key role in a healthy diet, especially in winter,” she explains. “They provide valuable nutrients like vitamin C, which supports immunity, and folate, essential for red blood cell formation. Plus, they’re high in dietary fibre to keep you feeling full for longer,” she says.  

Don’t let the stalks go to waste! It’s a simple shift that can stretch your meals further, reduce food waste, and boost your daily nutrition—all at no extra cost. 

So next time you’re prepping dinner, take a second look at what you’re about to toss. There’s often more you can use than you might realise—and it’s a smart way to get more out of every shop.
