Directions
Pre-heat the oven to 175°C and line a shallow slice / brownie tin (about 30 cm x 26 cm) with baking paper.
Heat the olive oil in a large frying pan and sauté the onion and bacon until fragrant and starting to caramelise. Remove from the pan and allow to cool.
Grate three of the courgette and place in a bowl, add the bacon mix and sprinkle over the flour gently tossing together.
Combine the eggs and oil and whisk together until foamy then add the grated cheese.
Slice the remaining courgette into thin rounds.
Add the egg mixture into the grated courgette and mix well then spread evenly into the prepared tin, top with the sliced courgette rounds and sprinkle over the feta cheese, season with cracked pepper and drizzle with olive oil.
Bake for 30-40 minutes until puffed and golden, allow to rest for at least 10 minutes before cutting.
Serve with a handful of wild rocket on the side.
