
Directions
- Remove the husks on the LeaderBrand Sweetcorn, then use a sharp knife to slice vertically down each cob to remove the kernels.
- Heat a drizzle of oil in a pan, then add the fresh corn kernels, smoked paprika and a pinch of salt. Stir occasionally, and cook until some of the corn kernels get slightly charred.
- In a large bowl, toss together the corn kernels, LeaderBrand Ranchslaw, cherry tomatoes, avocado, red onion and feta with the packet of homestyle dressing.
- Garnish with coriander and jalapeño if using, then right before serving top with a handful or two of broken up corn chips.
