Pink Beetroot Pancakes
A bright breakfast!
Juice Beetroot or whiz in a blender until smooth. Place with all other ingredients in a bowl and whisk together until you have a smooth batter.
Heat a pan on a medium heat and place a large tablespoon of the batter in the pan. Wait until some small bubbles appear and then flip. Cook until golden.
Serve pancakes with maple syrup and fresh slices of banana.
