Summer Rice Paper Rolls with Mango and Mint

Directions

For each roll, dip a rice paper sheet in a bowl of warm water for about 20 seconds to soften. Place sheet on baking paper on a chopping board and start adding ingredients in a line in the centre, leaving a gap at each side for folding. Layer mint leaves, mango slices, cucumber, shredded chicken and slaw, crispy noodles and peanuts from the Asian Fusion packet. Secure rice paper by folding in both sides and then bottom and then rolling up to the top edge. Garnish with sesame seeds from Asian Fusion packet. Serve with Asian Fusion dressing on the side.
