Sweet corn for all Occasions


Simple Prepartion Techniques>>

Fresh Corn fritters


Ingredients

4 cobs of sweet corn
½ c sour cream
1 egg
½ c self-rising flour
1 T sugar
1 t cinnamon
Optional:  2 T finely chopped parsley, chives, basil or rocket.


1. Cut sweet corn off the husks, mix with sour cream.
2. Mix all ingredients in bowl and spoon into medium hot pan with oil and butter until brown.
3. Put on double paper towel to absorb all the oil. Serve hot.
4. Delicious served with a creamy sweet chilli sauce – ½ c sour cream and 2 T sweet chilli sauce.

Grilled Corn on the Cob 

"This is an easy method for grilling corn on the cob. The corn will be very tasty and tender." 

Ingredients
6 cobs sweet corn
6 T butter, softened 
salt and pepper to taste 

1. Preheat an outdoor grill/barbecue for high heat and lightly oil hot plate/grate.

2. Peel back corn husks and remove silk. Place 1 T butter, salt and pepper on each piece of corn. Close husks.
3. Wrap each ear of corn tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender
